Baked potatoes with steamed broccoli with vegan queso


  • 2 Russet potatoes

  • 8oz broccolini

  • Jalapeños hot sauce for taste

Vegan queso: (makes 2 cups )

  • 1 1/2 cup of raw cashews

  • 3 tablespoons of nutritional yeast

  • 1/4 cup fresh lemon juice

  • 1 can of white northern beans

  • 1 tablespoon tahini(optional)

  • 2 tablespoons of jalapeños hot sauce

  • 1 teaspoons turmeric

  • 1 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon paprika

  • 1/4 teaspoon salt

  • 3/4 to 1 cup hot water


  • cook potatoes as desired. (Instapot, bake, boil, microwave..etc)

  • Steam the broccoli until it's softer.

  • Grind everything into vitamix to make vegan queso sauce.

  • To prepare baked potatoes slit in half add your broccolini in the center and then drizzle your vegan queso on top. Enjoy.
