2 Russet potatoes
Jalapeños hot sauce for taste
Vegan queso: (makes 2 cups )
1 1/2 cup of raw cashews
3 tablespoons of nutritional yeast
1/4 cup fresh lemon juice
1 can of white northern beans
1 tablespoon tahini(optional)
2 tablespoons of jalapeños hot sauce
1 teaspoons turmeric
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
3/4 to 1 cup hot water
cook potatoes as desired. (Instapot, bake, boil, microwave..etc)
Steam the broccoli until it's softer.
Grind everything into vitamix to make vegan queso sauce.
To prepare baked potatoes slit in half add your broccolini in the center and then drizzle your vegan queso on top. Enjoy.
