Ingredients:
8 oz organic whole wheat pasta
1 cup organic cherry tomatoes, halved
1 organic zucchini, diced
1 cup organic broccoli florets
1 organic red bell pepper, sliced
3 organic cloves garlic, minced
2 tbsp organic olive oil
½ cup grated organic plantbased Parmesan cheese
Juice of 1 organic lemon
Salt and pepper, to taste
Direction:
Cook the pasta according to package instructions. Drain and set aside.
Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute, until fragrant.
Add the organic zucchini, broccoli, bell pepper, and cherry tomatoes to the skillet. Sauté for 5-7 minutes, until the vegetables are tender.
Add the cooked pasta, lemon juice, salt, and pepper to the skillet. Toss well to combine.
Remove from heat and sprinkle with grated organic Plantbased Parmesan cheese before serving.
