Raw vegan Recipes

Here is my Tabouleh recipe from my book Raw Vegan Recipe Fun for Families:

This is one of my favorite dishes. I loved it when I ate it partially cooked before I went raw in 1994, and I still love it now in 2016, but I enjoy it with ground cauliflower instead of the old version made with bulgur wheat.

  • One large bunch parsley, chopped

  • 1/2 large cauliflower, chopped, or one whole small cauliflower

  • One large tomato, diced

  • 3 scallions, diced

  • 1/2 cup lemon juice

  • Several sprigs of mint

  • One avocado, diced

  1. 1. Process cauliflower in the food processor with the S blade until well ground. Remove the cauliflower from the food processor and place in a large bowl.

  2. 2. Then food process parsley, tomato, scallions, lemon juice and mint. Pulse several times until well mixed. Add optional diced avocado last, and mix thoroughly.

*Variation: Diced cucumber could also be added afterward for variation.

  • 2 cups peeled zucchini, chopped

  • 1/2 cup hulled sesame seeds

  • Juice of one lemon

  • 1 teaspoon paprika

  1. 1. Blend all ingredients until smooth.

  2. 2. Share with others and dip a variety of vegetables.

I love it with cucumber spears, celery sticks and lettuce leaves. Yum!

Welcome, fellow health enthusiasts,

In these toxic times, I feel it’s imperative to write to promote the raw vegan lifestyle so that families can still thrive, especially in view of shocking statistics, such as the following:  The rate of autism in New Jersey, my home state, has doubled in six years to one in 49 children — and one in 29 boys — an “epidemic increase” in a disorder that has confounded researchers for decades.
