Cauliflower Soup


Ingredients: 4 servings 30 minutes


  • 1 head Cauliflower

  • 1 Garlic, bulb

  • 1 Potato, small

  • 2 cups Vegetable broth

  • 2 tsp Miso paste

  • 1/2 cup homemade hummus

  • 1/2 cup little millets cooked

  • 2 tsp Nutritional yeast

  • 1 Salt + pepper

  • 2 tbsp Oil

  • 2 cups Water



Garnishing:

  • Cilantro

  • Red chili flakes

  • Lemonjuice for freshness


Direction:

  • Roast cauliflower and potatoe with olive oil, salt and pepper with whole head of garlic.

  • 325 for 30 minutes

  • Cook your millet in separate sauce pan

  • Now in your blender squeeze out all garlic, potatoes and cauliflower, with vegetable broth, miso paste, hummus, nutritional yeast, water and cooked millet.

  • Now in a big pot drop all the ingredients and let it simmer for 5-8 minutes.

  • Adjust salt and pepper or chili flakes

  • Garnish it with chili flakes, cilantro and lemonjuice with some olive oil(optional).
