
Ingredients: 4 servings 35 minutes
8-9 vine tomatoes or regular tomatoes
1 large head of garlic top trimmed about ¼-inch to expose the cloves
1 large yellow onion roughly sliced
Generous drizzle of olive oil
Salt to taste
1/2 cup of khodo millete cooked
1 ½ cups vegetable broth plus more as needed
2 tablespoons tomato paste
2 tablespoons maple syrup
2 tablespoons nutritional yeast(optional)
Garnishing:
Handful of fresh basil leaves
Unsweetened oat milk or vegan cream (optional)
Directions:
Roast tomatoes, onion and garlic cloves with salt and pepper. Cook it under the oven for 30 minutes on 375
Rinse it off get rid off all the extra dirt from your khodo millet. Cook your khodo millets in separate container. 1/2 cup with 1 1/2 cup of water.
In separate big pot get your 2 tablespoons of organic olive oil.
Combine everything in same big pot and mix it with blender.
Add your chopped basil, veggie bullion with 2 cups of water or 2 cups of vegetables broth.
Let it simmer add salt and pepper to taste. Now add tomato paste, nutritional yeast and maple syrup combine all and let it simmer for 3 minutes.
Garnish it with crushed dried basil leaves or fresh one with vegan cream or oats milk.
Simply enjoy.
