Vegan Egg Salad

Ingredients:

1/4 cup Celery

2 tbsp Chives

2 tbsp Dill

8 oz hearts of Palm or extra firm tofu cube shaped

1/2 tbsp Mustard or rice vinegar or jalapeno

1/3 cup Vegan mayo

1/4 tsp Salt and black Pepper

1/2 tsp Turmeric, powder


Direction: I have used heart of palms which I have to simmer it for 5-7 minutes. Let it cool down a bit or pour cold water on it.

Cut it in cube shapes. All all the thinly sliced cube shaped veggies, herbs and spices. Mix it all up. Adjust the taste.


You can use it as dip, salad or on a sandwich. Very versatile, even you can use it as side dish on parties.
