Vegan Greek Salad


Ingredients: serves 4 (30 minutes )

1 English cucumber sliced in cube shape

1 small Green Bell pepper

1 purple onions thinly sliced

10-15 kalamari olives

10-15 cherry tomatoes

1/4 block vegan feta cheese or extra firm tofu crumbles to cut down calories.


Note: You can add more green of your choice such as 1/2 bulk of Romain lettuce or 1 cup of Spinach. Or any green leafs that you have on hand.



Dressing:

1 tablespoon red wine vinegar

Salt and pepper to taste

1/2 teaspoon dried oregano


Enjoy.
