Vegan Rice Pepper Wraps


1 Avocado sliced

2 Carrots zulian cuts

2 Cucumbers zulian cuts

1 Handful Mint, fresh

1/8 Red cabbage

1/2 block Tofu, firm marinated in soy sauce and grilled and sliced zulian way

12 Rice paper sheets

1/2 Pack Vermicelli noodles

1 tsp Olive oil

Peanut sauce Dressing:

2 tablespoons peanut butter,

3 teaspoons soy sauce,

2 tablespoon maple syrup,

1/2 tablespoon rice wine vinegar,

water as needed

1 tablespoon garlic grated

1 teaspoon ginger grated

With a whisk, mix to combine until a smooth creamy consistency is achieved. If the sauce is too thick or clumpy, add a touch of water to help it thin out.
